Foodbank Recipe 2 Lentil Curry

Ingredients
1onion
1 green/yellow/orange/red pepper
1 small sweet potato or 2 carrots
1 clove garlic
stock cube
2-3 teaspoons of medium curry powder
1 can lentils
1 can of tomatoes
 
Method
Remove outer layers of onion and slice. Remove core, stalk and seeds from pepper and slice. Peel the sweet potato or carrots and chop into small pieces. Fry these vegetables in a little oil or butter for 5 minutes.
 Chop the garlic and add to the vegetables along with the stock cube broken into pieces and the curry powder. Cook for a minute or 2 for the spices to become fragrant.
Drain and rinse the lentils and add to the pan stirring well to coat the lentils in the spices. Then add the tomatoes and cook for a further few minutes until the carrots or sweet potato  are soft.
