Foodbank Recipe 4 Sweetcorn and Potato Chowder
SWEETCORN AND POTATO CHOWDER
INGREDIENTS
1 tin sweetcorn
1 tin potatoes
1 large onion
1 veg or chicken stock cube
1 cup water
Sprinkle of chilli flakes
Oil or butter for frying
METHOD
Remove outer layer of onion and cut up into small pieces. Gently fry the onion for 5 minutes in a pan in some butter or oil.
Open and drain the cans of potatoes and sweetcorn. Place these into a bowl and mash with a fork or masher.
Add them to the pan with a sprinkle of chilli flakes.
Dissolve the stock cube in a cup of boiling water and add to pan.
Stir and cook gently for another 8 minutes.
Your chowder is delicious with some bread or toast and will give you 2 to 3 servings.
A drained tin of crab meat can be added along with sweetcorn to make a crab and sweetcorn chowder.
