Wild West Bean Chilli
Ingredients - make 2 large portions or 4 portions with rice
1onion
(1 red/orange pepper – optional)
1 clove garlic
1 tin kidney beans
1 tin cannellini beans
1 tin tomatoes
1 stock cube
1 big teaspoon of smoked paprika spice
(sprinkle of chilli flakes for extra heat)
(salt, pepper, oil or butter for cooking)
Method
Discard outer layer of onion and chop into small pieces.
If using a pepper cut this into small pieces and discard the core, seeds and green stalk. Fry for 4 to 5 minutes in oil or butter. Drain the liquid out of the tinned beans and rinse with water. Add thegarlicfinely chopped and paprikainto the hot frying pan. Cook for 1 minute.
Add the tins of beans and sprinkle in the stock cube.
When hot and covered in spice add the tin of tomatoesand cook for a further 5 to 10 minutes. This is your bean chilli. Eat alone or with rice on the side. Delicious with a dollop of plain yoghurt or sprinkle with grated cheese. Store leftovers in airtight bag in fridge for 2 days or freeze.
