Everyday Pancakes

My go to breakfast can be eaten all year using different seasonal fruits. Instead of summer berries use apples mixed up in some cinnamon and honey to top, or stew a few plums in autumn. Frozen red berries are also excellent and easily available all year!
 
Pancake Ingredients
20 grams of ground almonds or coconut flour
20 grams of oats
1 egg
40 ml of milk or almond milk
spoonful of chia/flax
 
Topping
Good dollop of full fat greek yoghurt
Drizzle of honey if you need it
Fruit of your choice (stay away from high sugar tropical fruits, berries are best!)
 
Method
Mix up all the ingredients and whisk well by hand. Use hot frying pan with a bit of coconut oil or ghee. Divide into 3 pancakes, flip after a couple of minutes. Pile them up and top with full fat greek or natural yoghurt and fruits.
